This past weekend was a pretty laid back one to say the least, a majority of it was spent in the comfort of our home just me and my mini me. We were suppose to be traveling back to Missouri to spend it with family at our yearly family reunion, but mommy had a few projects that she had to handle and house chores. It’s been a lot going on within our family and just trying to stay strong for baby girl due to the fact she is 2 yrs old and doesn’t understand any of whats been occurring.
I decided to go ahead and do a brunch from home, made by yours truly which consisted of Cinnamon Toast Crunch French Toast, bacon, cheesy scrambled eggs and for me a mimosa, for my munchkin apple juice. It was my first time making it, but was fairly simple to do and minimal ingredients :
1 cup of cinnamon toast cereal crumbled up
1 cup of panko bread crumbs
2-3 slices of wheat bread or any bread
1 stick of butter melted to place in the skillet, as well as 2 tablespoons melted to put in the mix of cereal and bread crumbs
3 eggs wisped up
1/3 cup of milk
1 tablespoon of vanilla
Fromt there it’s just like you would make regular french toast, dip the bread in the egg batter mixture, and just take an extra step and toss it in the cereal bread crumb mixture. Then skillet time, put the butter in to fill the bottom of the skillet and let it cook on both sides about 4-6 mins so it can brown. Then voila your done, it added whipped cream and a few cereal crumbs for decoration and maple syrup.
Brunch has become kind of a tradition for us, most times it’s us going out to a local spot such as: Famous toastery and Terrace Cafe two of our favorites in the Ballantye area here in charlotte within 3-5 miles from our home. Most times Ill have a girlfriend or two join us. I’m one of the only ones who has a child in the group so far but they understand and are happy to have my baby girl tagging along for some girls time!
As seen below is a typical brunch outing at Terrace Cafe with their fan favorite red velvet waffle with powdered sugar and strawberry topping, fried chicken and scrambled cheesy eggs, fruit combo and a mimosa or bellini. Yummm…
Its the little things that warm my heart and make the bad days seem a little brighter. Stepping into mommyhood has been nothing more than a blessing, its challenging at times due to it being my first child and knowing I have a little persons life in my hands and who looks to me to show them way it can be scary to think about. But she has helped me more than she will ever know, we always say were “Best Friends” and toast our glasses and her sippy cup saying cheers to a great time! lol it’s like a mini version of me. As I continue to go throught life and learn new tricks and trades im loving cooking, hanging, and making new memories with her.
